Teppanyaki Chef

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.

  • To assist Japanese Chef for the Teppan and grills operations of the outlet and maintain the highest standard of food quality and hygiene level in order to exceed the members’ and the guests’ expectation
  • To assist Japanese Chef in planning, menu creation and design, cost control, production, preparation and presentation of menus
  • Handle all types of Teppanyaki production and provide training and guidance to the team accordingly
  • Set up daily mis-en-place
  • Responsible for display of food items and show pieces
  • Conduct food checks, review event orders and handle food preparation
  • Follow and enforce hygiene and safety standards set by the Hong Kong Jockey Club
  • Supervise the general cleaning and proper handling of food leftovers (reusable) after meal services
  • To maintain the cleanliness of food storage areas and manage food storage in accordance with the Club’s standards and conduct stock take on regular basis

  • A minimum of 8 years’ relevant experience in reputable hotels or restaurants. Exposure in Michelin starred operations is preferred
  • At least 3 years in supervisory position
  • Knowledge of Teppanyaki in preparation and service
  • With strong understanding on the operation of relevant section including the daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters
  • Creative and sound knowledge on the food trend in the market
  • Able to combine different cuisines to develop new dishes and make continuous improvement on the existing
  • With experience of pre-opening project will be a definite advantage
