Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.

• Handle different stove cooking techniques, and manage the yield of dried food
• Handle all high-priced banquets and menu
• Give direction to the team to arrange the mise-en-place and after-work environment sanitation
• monitor the quality of subordinates’ production and semi-cooked products
• Direct the production of all dishes
• Monitor the inventory of the dried food and semi- prepared dried seafood
• Understand the recipes and ingredients and guide the subordinates to work
• Handle and follow-up the kitchen maintenance order of the stove equipment
• Direct Junior Cook to perform regular kitchen cleaning to ensure environment sanitation
• Execute the work from the superior, communicate to the subordinates and implement
• Design monthly training schedule
• Schedule the Stove Cooks' duty roster

• 8 years’ relevant experience in reputable hotels or Chinese restaurants
• At least 3 years in supervisory position
• With strong understanding on the operation of Stove section including the daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters
• Creative and sound knowledge on the food trend in the market
• Able to combine different cuisines to develop new dim sum dishes and make continuous improvement on the existing
• With experience of pre-opening project will be a definite advantage
