Executive Pastry Chef

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organisations for a variety of functions.

• Responsible for the direction and co-ordination of all food preparation related activities carried out in pastry kitchen
• Handle all types of pastry production and provide training and guidance to the team accordingly
• Set up daily mis-en-place
• Conduct food checks, review event orders and handle food preparation
• Follow and enforce hygiene and safety standards set by the Hong Kong Jockey Club
• Supervise the general cleaning and proper handling of food leftovers (reusable) after meal services
• Reorganize refrigerators and entire section, fill up stocks items up to par to work on all necessary arrangement for next meal period

• A minimum of 12 years’ relevant experience in reputable hotels or clubhouses. Exposure in Michelin starred operations is preferred
• At least 5 years in supervisory position
• Knowledge of pastry in preparation and service
• With strong understanding on the operation of relevant section including the daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters
• Creative and sound knowledge on the food trend in the market
• Able to combine different cuisines to develop new pastry products and make continuous improvement on the existing
• With experience of pre-opening project will be a definite advantage
